Nice! Besides the normal smoked fare, try bacon wrapped stuffed jalapeños nicknamed Atomic Buffalo Turds. Bacon wrapped beef meatballs called Moinks are also great appetizers. :)

You had me at bacon wrapped... The smoker was given to me by a friend moving to England. I've been watching pit masters all morning. So much to learn.

My father in law is big into smoking stuff. I do it too but I don't do a ton of reading about it. It stick to the basics. One recommendation is http://www.smokingmeatforums.com/. Lots of good stuff there.

Turned out good for our first time. The meat was very tender and held a lot of the juices in. Dried out a little when we cut it. Probably should have let the meat rest. The spices we used came out a little on the almost too spicey side but it was delicious.

Whenever you smoke, you need to also include a steamer pan. My steamer pan I fill with beer, garlic, and onions. Really helps the meat not dry out and adds a tremendous amount of flavor if done right.

Just don't let the steamer pan boil dry.

We smoked baby back and spare ribs today. Is there a trick of the trade on removing the membrane? It's not as easy as it looks on PitMasters. Lol. Help!
