So, I am gonna try to cover everything as much as I can. I would not normally post on a forum, but this has hit me hard. Lost my baby last night!
55 gallon
Cascade 1000 with bio balls, ceramic, purigen, and poly.... and Penguin 350 for filtration with weekly water changes on Friday night.

Stock
2 Oscars..Bubbles was 8" Kraken is 7"
3 firemouth
1 turquoise severum
1 Pleco

Water parameters where fine.
Temp at 80 as it has always been.

I know the tank is overstocked, but water conditions were always fine.

Middle of last week...I moved one of the Firemouth out to another tank, because he was getting beat up by another Firemouth.
At the same time I also switched from API Stress coat and API stress zyme.....to Prime in all my tanks after a water change.

My Oscars went from happy puppy dogs, that would wag their tails when I would walk into the house...to dull fish that layed on the bottom of the tank. They stopped eating overnight, but the other smaller fish are doing just fine. All, while water conditions are fine. It happened so quick.

My remaining Oscar, Kraken has been moved out of the tank where he was lethargic, and is swimming now in a 30 gallon.
He has been dosed with API General Cure

Is there anything else I should be doing right now? Am I missing something?
Need some help...I do not wanna lose my other Oscar!!!

Sorry to hear about your loss. Can you share a bit more information with us?
How long have you had your fish?
Really need to know your water parameter results, that being ammonia, nitrite and nitrate.
What are you testing your water with?
What quantity and how often are you changing water?
And yes you are extremely overstocked which will not be helping this situation.

I had Bubbles for almost 6 months. He was the reason I got back into this. My goal was just to have one fish..one tank, but you know how that goes.
Water paremeters, I will have to find a pic.
I use the API master test kit as well as some strips.
I change at least 25% every Friday night.

He was almost 9"...Like I said..It all progressed over night. One day he is wagging, the next day...nothing!!!

Would suggest water change schedule needs to be increased, somewhere in the 75% range twice weekly, particularly with current stocking.
Really need your water results.
Is your 30 gallon cycled?
Sometimes fish can suddenly die for no apparent reason, just need to make sure remaining fish kept in best possible conditions.

Yep, the 30 is cycled, he is swimming around, instead of laying on his side. I will do water tests now.

You don't have to tell me what is wrong. I am so pissed at myself right now. That is after 2 water changes this last week. Just in shock that my big Oscar would go first. R.I.P. Bubbles, I will be a better fish daddy because of you.

Daily large water changes are required, extended exposure to nitrite levels you are showing can be toxic.
It would appear your filters are being overwhelmed by your over stocking and inadequate water changes. Make sure you continue adding a full dose of Prime each water change.
Yes we all learn from our mistakes, hopefully you get back on the right track.
